Js chix cacciatore with veggies/cheese
serves 3. Takes about 40 mins. About 7 points/serving.
1 TBL EVOO
1.5 TBL sundried tomato pesto
1/3 C onion- diced
1/2 C carrot - sliced
1/2 C zucchini - cut in quarters
1/2 C red pepper - chopped
2 TBL minced garlic
Cook a couple mins, tossing. Add rest:
1/2 C arborro rice
1 pkg TJ chix broth packets
1/2 C water
3/4 15 oz can crushed tomatoes
8 oz pre-cooked dark meat skinless chicken- I made the night before- put in shredded style
1/2 tea dried oregano
16 grinds pepper
1/2 tea red pepper flakes
1/2 tea williams sonoma pizza seasoning
1/2 tea salt
Turn the heat to low/med, mix and let simmer for the rest of the time. When the rice looks ready, take
bay leaf out and add last ingredient below.
1/3 C TJs 4 cheese shredded including parmesan.
Take off the burner, mix cheese in. Serve.
NOTES: This turned out very flavorful!
* Vegetables are filling and count many times for zero points. And, its easy to provide an all around meal from one serving vs. many separate items, in different skillets.
* Also, shredding the chicken makes it absorb more of the flavor vs. bigger chicken chunks. But, you can make either way!
