Js seasoned Chicken Caesar salad
Serves 1. Takes 20mins , about 6 points
1/3 C beer
6 oz chix breast - skinless, boneless….cut into fajita like pieces
Dip into beer, put on oil sprayed George Foreman Grille
Simply Organic chix grille seasoning and dashes of crushed red pepper
Cook about 2 mins 1 side, 1 min other side (no red in meat).
SET ASIDE half for another meal!
1/2 head romaine lettuce: organic, torn into bite size pcs
2.5 TBL 3 chs mix- shredded
3 TBL Girards light caesar dressing (this is one of the best)
Put 3 oz chix on top, serve. Top with fresh ground pepper to taste.
Notes; 1) Its best to toss your salad and dressing together, but who wants to dirty another dish?? 2) I like a thicker slice of chix otherwise, cutlet versions get dried out.
