TIP: Ideally, using fresh scallops are always best, but they can be $25/lb. Most of the sales will be on the frozen. A good time for sales is at New Years.
Js scallops in bacon
Takes 20 mins. Makes 1 serving, about $3!! Approx. 5 pts.
4 oz Sea Scallops (thaw 15 mins, cook est. 6 mins)
Assume you make bacon for breakfast, leave the grease in the pan for later. Use this for cooking your scallops. Heat this, then add scallops. Scallops cook fairly quickly and are delicate but time varies on thickness.
Js asparagus & mushroom risotto
Makes 4C. Takes about 40mins. About 4 points/1C serving.
3C chix broth
1/2 C vermouth
Put on low heat.
1 TBL light butter
1/3 C shallot or onion- chopped
Cook a few mins, add:
1 C arborio rice
Cook a few mins, without turning brown, stirring. Add enough of pan liquid to cover rice, when it gets low, add liquid from pan again (about 3x).
When the last batch is getting low, add the veggies (about 10mins):
1C asparagus- bottoms cut off, cut in 1" pcs
4 oz mini bella mushrooms - sliced
2 TBL bacon bits (assume pre-made)
Once liquid absorbed, take off burner and add rest:
1/3C Italian cheese shredded- I use Whole Foods Organic
12 grinds pepper
1/4 tea nutmeg
