J's cheesy beef & bean goulash (v.4)
makes 4 C, takes ~30mins : about 5 points/cup
1/3 C onion- chopped
2.5 TBL minced garlic
1/2 TBL EVOO
Cook a couple mins.
8 oz ground sirloin
1 tea chili powder (med.)
1/4 tea crushed red pepper
Cook all over med heat until meat is light pink. Break up meat while sauteing. Spoon off grease (sometimes I don’t b/c there isnt much).
Part 3- same skillet
1 C warm water
3 oz (about 2/3C)wheat elbow noodles
2 regular size bay leaves
Increase heat to boil, then reduce heat to medium.
1/2 C fresh tomatoes - chopped, if necessary: crush in pan when they get hot (I use beefsteak )
14.5oz can org. fire roasted diced tomatoes
1/2 tea celtic salt
6 grinds pepper
3/4 TBL red hot sauce
1 can (15 oz) red kidney beans - drained/rinsed
1 TBL worcestire
1 TBL soy sauce
1/4 tea stevia extract
13 grinds Mccormicks® steakhouse seasoning
Cook until most of water is gone on a low/med simmer. Take out bay leaves, add cheese and serve.
2.5 oz american cheese - put in small pcs mix in until melted.
You really only need one cup!! Wait 20 mins, if youre still hungry, have a little more. Part of changing habits are starting with portion sizes.
