Js saucy salmon with green beans
serves 1. Takes 35 mins; About 10.5 points total
Oven on broil
1 TBL minced garlic
2 TBL fresh parsley- minced
1 tea dried chives
1/4 tea dried tarragon
1 TBL worcestire sauce
On the side of the pan, put these in and crush into a paste. Add rest and mix:
1 TBL light mayo
1.5 tea lemon juice
1/8 tea turmeric
1/8 tea curry
1/2 TBL EVOO
7 oz coho salmon
10 grinds pepper on top
Put EVOO in pan, put salmon skin down in it. Take sauce and spoon on top of skin. Any sauce left, make
sure it gets on bottom of salmon. Put in oven 10 mins.
3 oz (handful) green beans, cut ends off
1 TBL sesame oil
sprinkle kosher salt
Heat oil in skillet, stir fry beans about 4 mins while salmon cooks. Top w a few sliced almonds and
slight lemon juice.
NOTE: Many use butter for salmon bases. I like the mayo b/c its thicker and doesn’t burn as easily.
