Js goulash soup
makes 4.5 C, takes ~30mins ; 7pts/cup; $2/cup
1/3 C onion- chopped
2.5 TBL minced garlic
1/2 TBL EVOO
Cook a couple mins.
8 oz ground sirloin
1 tea chili powder (med.)
1/4 tea cayenne
Cook all over med heat until meat is light pink. Break up meat while
sautéing. Spoon off grease (sometimes I don’t b/c there isnt much).
Part 3- same skillet
1 C warm water
3 oz (about 2/3C)small wheat noodles (use what you like)
2 regular size bay leaves
Increase heat to boil, then reduce heat to medium.
1/2 C fresh tomatoes - chopped, if necessary: crush in pan when they get hot (I use beefsteak )
14.5oz can org. fire roasted diced tomatoes
1/2 tea celtic salt
6 grinds pepper
3/4 TBL cholula sauce
1 can (16 oz) Bush's chili beans, medium with sauce
1 TBL Worcester
1 TBL soy sauce
1/4 tea stevia extract
Cook until some of the water is gone on a med simmer. Take out bay leaves, add cheese and serve.
