J's beef stew
makes 3 servings of 1.5c/ea @7.6 points/serving. About 35 mins to make.
1 TBL whole wheat flour (my WW note: 4 tbl=1/4C, 1/4C=1 pts)
1/2 TBL onion powder
1/2 TBL blk pepper steak spice
9 oz organic strip steak with fat off- cut into small cubes
5 shakes meat tenderizer
Put all meat and dry ingredients in Ziploc bag, shake.
1 TBL EVOO
Warm oil in skillet, add bag contents. After nearly done, put meat in pot.
14 oz organic beef broth
1/2 pkg TJ chix broth
2 oz red wine (I used malbec for best results)
1/4C tomato- sliced thin or 1/2 TBL tomato paste
1 TBL ketchup
5 oz redskin potato - cut into bite size
2 dried small bay leaves
2 tea minced garlic
1 TBL crushed dried onion
12 oz frozen peas and carrots
6 grinds pepper
1/2 tea seasoned salt
Put all in big boiling pot. Add frozen veggies last and turn heat lower. Veggies should still have some crunch. Remove leaves. Add small bowl ingredients, stir until thickened. Serve.
2 TBL Corn starch
3 TBL wheat flour
1/2 C 2% organic milk
Mix these ingredients together and add to the pot (while on low heat), slowly for thickening.
